12/07 class: braised rabbit cannelloni, sweet potato

Rabbit meat is eating throughout Italy. In Sicily we cook it with a sweet and sour sauce. In the island off  Ischia on the coast of Naples rabbit is cooked in a  white wine sauce.  In Tuscany is served with pappardelle in a Ragu sauce.

In this class the rabbit will be braised, and the cannelloni will be stuffed with it along with sweet potatoes.
