03/17/24 Cooking Class Hands On: Crespelle Stuffed with Asparagus, Bechamel

Crespelle are Tuscan crepes that are often used in place of pasta. They can be stuffed and rolled like cannelloni or layered as you would make a lasagna. Crespelle can also be either sweet or savory. We will demonstrate 2 ways to use crespelle a savory with asparagus, cheese and besciamella. And a sweet one with lots of layers of mascarpone and lemon cream.
