In tonight’s Abruzzese cooking class we will handcut chitarra pasta and toss it with sweet tomato confit topped with crisp, lemony pangrattato. We’ll learn techniques for using a guitar string tool to slice through fresh sheet pasta, creating beautiful long strands with texture.
