02/08 cooking class, hands on: croxetti alle erbe, chocolate budino

Today we'll shape colorful Italian croxetti pasta by hand. These stamped pastas hold herbs and flavors in their crevices when cooked. After rolling thin sheets, we'll cut rounds to press with etched molds - flowers, stars, or traditional designs from Italy. The options for customization are endless! Our hand-shaped croxetti will grab the herby notes of our buttery sauce. We will finish with my favorite chocolate budino.
