Rotolo di pasta ripieno, is one of Italy less obvious pasta dishes, but it is a real showstopper. Originally from Emilia Romagna, consist of a sheet of pasta covered with filling, rolled up to form a roulade, poached and served with a brown butter sauce and a cured fried egg yolk.
