02/21 Cooking Class: Sicilian couscous with fish broth and Sicilian Almond Cookies

Couscous was introduced to Sicily by way of North Africa. Sicilian couscous is topped with a glorious fish broth.The fragrant tomato and seafood broth is a finishing for the semolina granules to soak up. I watched my Grandmother patiently shape the tiny pasta granules by hand.
My all time favorite dish!
